Blackberry Brie Grilled Cheese with Balsamic Drizzle is a gourmet sandwich that pairs creamy brie cheese and sweet-tart blackberries on toasted bread, finished with a tangy balsamic reduction.
Ingredients
- 8 slices artisan bread (sourdough or brioche)
- 8 oz brie cheese, sliced
- 1 cup fresh blackberries
- 2 tablespoons sugar
- 1/4 cup balsamic vinegar
- 3 tablespoons butter, softened
- Fresh thyme (optional)
Instructions
- In a small saucepan, simmer blackberries and sugar over medium heat for 5–7 minutes until berries soften and sauce thickens slightly.
- In another small saucepan, simmer balsamic vinegar over low heat for 8–10 minutes until reduced by half; set aside.
- Butter one side of each slice of bread.
- Place 4 slices of bread butter-side down on a skillet over medium heat.
- Layer brie cheese and a spoonful of blackberry mixture on each slice.
- Top with remaining bread slices, butter-side up.
- Cook for 3–4 minutes per side until bread is golden and cheese is melted.
- Remove from skillet, drizzle with balsamic reduction, garnish with thyme if desired, and serve warm.
Notes
- Use ripe but firm blackberries for best texture.
- Brie rind is edible and melts well—no need to remove.
- Add prosciutto for a sweet-and-savory twist if desired.
