Description

Ingredients

  • 1 lb beef tenderloin
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 French baguette, sliced into 1/2-inch slices
  • 2 tbsp olive oil (for brushing bread)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp nutmeg (optional)
  • Fresh parsley or chives, chopped (for garnish)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Arrange baguette slices on a baking sheet, brush with olive oil, and bake for 8โ€“10 minutes until golden and crisp. Set aside.
  2. Season beef tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned and cooked to desired doneness (medium-rare recommended). Rest for 10 minutes, then slice thinly.
  3. In a saucepan, melt butter and sautรฉ garlic for 30 seconds. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in milk and cream, cooking until sauce thickens. Stir in Parmesan cheese and nutmeg until smooth and creamy.
  5. To assemble, top each crostini with a slice of beef tenderloin and spoon over Parmesan cream sauce.
  6. Garnish with fresh parsley or chives and serve warm.
