Ingredients
- 1 lb beef tenderloin
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 French baguette, sliced into 1/2-inch slices
- 2 tbsp olive oil (for brushing bread)
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/4 tsp nutmeg (optional)
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Arrange baguette slices on a baking sheet, brush with olive oil, and bake for 8โ10 minutes until golden and crisp. Set aside.
- Season beef tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear beef on all sides until browned and cooked to desired doneness (medium-rare recommended). Rest for 10 minutes, then slice thinly.
- In a saucepan, melt butter and sautรฉ garlic for 30 seconds. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and cream, cooking until sauce thickens. Stir in Parmesan cheese and nutmeg until smooth and creamy.
- To assemble, top each crostini with a slice of beef tenderloin and spoon over Parmesan cream sauce.
- Garnish with fresh parsley or chives and serve warm.

- Cook tenderloin to medium-rare (135ยฐF / 57ยฐC) for best flavor and tenderness.
